Zoodle Alfredo with Bacon
Can also be done with normal pasta, but is Keto friendly with the zoodles.
Ingredients
- 250g bacon
- 1 1/2 cup heavy cream
- 1 shallot
- 1/2 cup parmesan
- 1/4 cup white wine
- Zucchini, spiralised
- 2 cloves garlic
- Chicken breast (optional)
Method
Finely chop shallot. Cut chicken into pieces and fry in oil. Remove.
Cook bacon for 8 minutes, or until crispy. Drain on paper towel. Keep 2 tbsp of bacon fat. Fry shallots for 2 minutes, and add garlic for 1 minute. Add wine, cook until reduced by half. Add cream and bring to boil. Reduce heat to low and add parmesan. Cook for 2 minutes or until thickened. Add chicken and noodles and toss.
