Vinaigrette

Vinaigrette

A beetroot salad.

Ingredients

• 1 beetroot, large
• 2 potatoes
• 1 carrot
• 1 onion
• Pickles
• Pickled cabbage
• Peas
• Olive oil
• Mustard
• Vinegar

Method

Mix oil, mustard and vinegar in a small jug. Combine everything else in a bowl and pour over the dressing.

Use however much cabbage/pickles/peas/oil/mustard/vinegar you feel like.
