Lamb Noodles
Lemony, easy to overcook the lamb. It is kind-of a stirfry so be ready fora lot of chopping.
Ingredients
- 250g egg noodles
- 2 tbsp vegetable oil
- 500g diced lamb
- 2 carrots
- 1 red capsicum
- 1 yellow capsicum
- 200g pak choi
- 200g bean sprouts
- 4 spring onions
- 4 tbsp oyster sauce
- 1 tbsp soy sauce
- 2 tbsp honey
- Zest and juice of ½ lemon
Method
Cut carrots and capsicums into matchsticks. Cut spring onions into thin strips.
Prepare noodles according to packet directions, drain well.
Heat oil in a large pan until hot. Add the lamb, stir-fry for 5 minutes or until seared on all sides.
Add carrots and capsicums, and stir-fry for 4 minutes or until softened. Add the pak choi, bean sprouts and spring onions, cook for a further minute.
Reduce the heat, add drained noodles, oyster sauce, soy sauce, honey, lemon zest, juice and seasoning. Combine well and fry for 2 minutes or until everything is hot and cooked through.
