Chicken with Lemon and Cilantro Couscous
Very tasty. Doesn’t look like much marinade but it will be enough for 2 large chicken breasts. I recommend grilling on a BBQ.
Ingredients
- 2 large chicken breasts
- 1 tbsp olive oil
- 1 clove garlic, crushed
- 1 tsp ground coriander
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- Pinch of cayenne pepper
- 1 tsp salt
- 1 lemon, juiced
- 250g couscous
- 30g butter
- ¼ cup fresh coriander, chopped
- 100g pitted black olives, chopped
- Pepper
Method
Combine chicken with oil, garlic, ground spices, cayenne pepper, salt and 1 tbsp of lemon juice. Cut chicken into cubes, and toss in marinade. Leave to marinade for as long as possible.
Soak wooden skewers in water for 10 minutes. Thread chicken onto the skewers, and grill for 8-10 minutes, turning occasionally until cooked through.
Prepare couscous according to packet instructions. Fluff with a fork. Stir in butter, remaining lemon juice, coriander and olives, and season.
